Australian Hiramasa
There is no question that the waters of the Great Southern Ocean are amongst the world’s most pristine.
This is why these unpolluted oceanic waters have been chosen to establish the very first farm of Yellowtail Kingfish.
A finfish that offers firm white flesh, the Yellowtail Kingfish is suited to both sophisticated and classically simple culinary applications limited only by imagination. The fish will please the most discerning consumer.
Today, the finfish aquaculture industry operating from South Australia has a deserved unblemished reputation world wide for farming and production of finfish renowned for its premium quality and absolute freshness.
The challenge we accepted as an aquaculture industry operating from these shores, was not to interfere with the perfection of mother nature, but to improve on it.
The Yellowtail Kingfish Seriola lalandi, also known as Gold Striped Amberjack, is a natural inhabitant of the waters off South Australia.
It has, however, taken a number of years for our marine biologist to perfect the production of large quantities of disease free juvenile fish which are placed in the ideal waters we have chosen for growing out.
The reward for this investment in time, and the search for excellence, is that we are now producing large volumes of premium quality Yellowtail Kingfish which constantly exceed the stringent requirements of our many customers.
We believe it is essential that all the processes involved in the farming of the Yellowtail Kingfish should follow best practice principles and be synonymous with the unpolluted, ecologically sound natural habitat in which it is based.
Techniques have been developed to obtain large volumes of eggs from broodstock which are held in our hatchery and hand fed to ensure good health and controlled growth.
The hatchery has unique access to a warm water supply which induces the natural process of spawning. An expansive system of rearing tanks provides the means to feed the larvae live feed. From this point, highly skilled hatchery staff ensure the quality control process continues whilst the larvae develop into small juvenile fish.
Juvenile fish are continuously monitored and graded in on shore tanking systems until they reach a weight of 5 grams. They are then carefully dispatched to off shore sea farms strategically placed along the pollution free South Australian coastline for grow out. These ideal conditions include twice daily 2 metre tidal movement and annual average water temperatures of between 14 and 26 degrees celsius.
The sea farms are situated in a disease free environment and vigilant daily monitoring by qualified aquaculture personnel of oxygen levels, water flow, water temperature and stock densities, ensures stress free growth for the farming of Australian Hiramasa.
In our determination to continually exceed the expectations of our customers, we have designed our harvesting and processing around the advanced Hazard Analysis Critical Control Point System (HACCP). This is a management system keyed to thorough evaluation, safety assurance and constant improvement of food products.
Engaging a fast track system of processing and packaging at our modern on shore handling facility minimises the time from sea farm to transport, and a network of international carriers delivers the product in the best possible timeframes to desired destinations around the world.
Not only does our attention to detail prior to harvest ensure that only the best product leaves our shores, stringent quality control is continued through our off shore expertise who, in the immediate handling of the Australian Hiramasa, maintain the product in the superb condition expected of a premium product.
